Because he can

Othello, as the beginning of the play details, can't be gotten to
in battle. The one place he is vulnerable is in his love for Desdemona.
For that, he will forsake everything. Iago knows that. The reader
knows that. Everybody knows that. Othello will forsake himSelf (cap. S)
for that relationship - thus leaving himself as a self, malleable -
Iago takes advantage of that.
